Tomato Zabaglione

Ingredients:

6 egg yolks

¼ cup (60ml) sugar

6 small pear tomatoes, chopped

1 cup (240ml) blueberries

1/3 cup (80ml) semi-sweet chocolate, shaved

1 cup (240ml) 35% cream

1 tablespoon (15ml) sour cherry extract

 

Method:

Heat water in a medium sized pot over medium-low heat.

In a mixing bowl, whisk together egg yolks and sugar.

As you are whisking constantly, place mixing over pot to create a bain-marie.

When the sugar and egg begin to froth, slowly add chocolate shavings.

Remove from heat and reserve.

In a separate mixing bowl, whip the cream.

Add half the tomatoes, half the berries and half the cream to egg and sugar mixture.

Add the cherry extract.

Place in refrigerator for 30-40 minutes.

Serve cold in your dish of choice, and garnish with leftover tomatoes, blueberries and cream.

Top with chocolate shavings.
