Ingredients
1 cup (240ml) sugar
1 cup (240ml) water
1 anise pod, whole
2 cloves, whole
2 cups (480ml) pineapple, peeled and cut into 1 inch pieces
2 cups (480ml) crushed ice
1 cup (240ml) whole lychee fruit, peeled
Method
In a small pot, heat water, star anise, cloves and sugar over medium heat until sugar dissolves.
Add pineapple and lychee and bring to a boil.
Cook for 3-4 minutes, or until fruit has started to soften.
Cool mixture completely.
Remove star anise and cloves.
Divide fruit into 4 portions and place over equal amounts of crushed ice.
Top it off with some syrup, and serve.
