Fruit Tart with Lavender Ice Cream

FRUIT TART WITH LAVENDER ICE CREAM

Ingredients:

  • 1 pint (470 ml) good quality vanilla ice cream
  • 1 tablespoon (15 ml) fresh lavender petals
  • Fruit Tart, prepared, 6 portions
  • Micro basil, to garnish

 

Method:

Pull the ice cream out to soften at room temperature, for about 30 minutes.

Transfer the softened ice cream to the bowl of a high-speed blender.

Add the lavender petals and blitz until very well mixed.

Transfer to a container and re-freeze until needed or for at least 1 hour.

Preheat the oven to 350 F (175 C).

Place the Fruit Tart on a tray and heat in the oven for 5-10 minutes until warmed through.

Slice and divide onto 6 small serving plates.

Top each slice with a scoop of the lavender ice cream, garnish with micro basil, and serve immediately.
