Ingredients:
1 cup (240ml) unsalted butter
8 ounces (240g) dark chocolate
4 large eggs, whole
4 large egg yolks
½ cup (120ml) sugar
¼ cup (60ml) all-purpose flour
Butter, for greasing
Vanilla Ice Cream, to serve
Method:
Preheat oven to 450 degrees Fahrenheit.
In a medium saucepan, melt butter and chocolate over medium heat, stirring constantly.
Stir sugar into the egg mixture and whisk for 3 minutes, until light and frothy.
In a mixing bowl, whisk together eggs and egg yolks.
Add the egg mixture and the flour into the pan with the melted chocolate and mix until smooth.
Grease ramekins with butter and dust with flour.
Divide batter between the ramekins, and place on a baking dish.
Bake for exactly 10 minutes.
Remove from the oven, and let rest for 1 minute.
Flip onto serving plate, and remove ramekin to expose lava cake.
Serve warm with vanilla ice cream on the side.
