Ingredients:
2 teaspoons (10ml) agar agar
1 ½ cups (360ml) black sesame seeds
2 ½ cups (600ml) milk, divided in 2 ¼ (540ml) cups and ¼ (60ml) cup
2/3 cup (160ml) granulated sugar
1 cup (240ml) whipping cream
Method:
Heat ¼ cup of milk and agar agar in a small sauce pan over medium-high heat for 4-5 minutes.
Place sesame seeds in a mortar and pestle, and grind until fine.
In a medium-sized sauce pan, mix the ground sesame seeds, remaining milk and sugar.
Heat over medium-high heat, and bring to a boil while stirring constantly.
Once boiling, add the agar agar and milk mixture. Simmer, and stir.
Whisk briefly, and let cool for 10 minutes.
While mixture is cooling, prepare 8 small serving cups.
Once chilled, whip the mixture for 5 minutes and pour equally into the serving cups.
Cover, and place in refrigerator for 4 hours to set.
Once firm, uncover and serve cold.
