Banana Bread

Makes: 1 nine inch pan

Ingredients

  • 2 cups (500ml) all-purpose flour
  • 2 teaspoons (10ml) baking powder
  • ¾ teaspoons (3.75ml) salt
  • ½ teaspoon (2.5ml) baking soda
  • ¾ cup (187ml) room temperature butter
  • 1 ¼ cup (310ml) brown sugar
  • 3 whole large eggs at room temperature
  • 2 bananas whole peeled and mashed enough for 1 cup (250ml)
  • 1 cup (250ml) lightly toasted walnuts pieces
  • ½ cup (125ml) chocolate chips (optional)

Directions

  1. Butter a 9x5x3 inch (23x12x8cm) bread pan. Preheat oven to 350F (176°C).
  2. In a medium bowl sift together flour, baking powder, salt and baking soda.
  3. In a separate medium bowl cream the butter and the sugar.
  4. Add the eggs and whisk to combine.
  5. Add the bananas, mix to incorporate.
  6. Fold in the nuts and chocolate if using.
  7. Place into prepared bread pan.
  8. Gently tap on the counter to release any air bubbles.
  9. Place in preheated oven for 50 minutes or until golden brown and a toothpick when inserted into the center of the bread comes out clean.
