Makes: 1 nine inch pan
Ingredients
- 2 cups (500ml) all-purpose flour
- 2 teaspoons (10ml) baking powder
- ¾ teaspoons (3.75ml) salt
- ½ teaspoon (2.5ml) baking soda
- ¾ cup (187ml) room temperature butter
- 1 ¼ cup (310ml) brown sugar
- 3 whole large eggs at room temperature
- 2 bananas whole peeled and mashed enough for 1 cup (250ml)
- 1 cup (250ml) lightly toasted walnuts pieces
- ½ cup (125ml) chocolate chips (optional)
Directions
- Butter a 9x5x3 inch (23x12x8cm) bread pan. Preheat oven to 350F (176°C).
- In a medium bowl sift together flour, baking powder, salt and baking soda.
- In a separate medium bowl cream the butter and the sugar.
- Add the eggs and whisk to combine.
- Add the bananas, mix to incorporate.
- Fold in the nuts and chocolate if using.
- Place into prepared bread pan.
- Gently tap on the counter to release any air bubbles.
- Place in preheated oven for 50 minutes or until golden brown and a toothpick when inserted into the center of the bread comes out clean.
