Ingredients:

  • 4 slices thick-cut bacon
  • 1 ripe heirloom tomato
  • 2 teaspoons (10 ml) red wine vinegar
  • 1 tablespoon (15 ml) olive oil
  • Salt and pepper
  • 2 slices good quality white bread
  • ¼ cup (60 ml) mayonnaise
  • 2-3 butter lettuce leaves

Method:

  1. In a large skillet over medium-high heat, fry the bacon until crisp, turning often, roughly 4-5 minutes.
  2. Drain the bacon on paper towels
  3. While the bacon cooks, slice the tomato into thin rounds. Transfer to a plate, season with salt and pepper, and dress with the vinegar and olive oil.
  4. Toast the bread
  5. Spread the toast generously with the mayo on one side
  6. Top the mayo with the tomatoes, followed by the lettuce
  7. Top the lettuce with the bacon, crown with the other piece of mayo’d toast, and secure with frilly toothpicks. Cut in half and serve immediately.
