The Classic BLT
Ingredients:
- 4 slices thick-cut bacon
- 1 ripe heirloom tomato
- 2 teaspoons (10 ml) red wine vinegar
- 1 tablespoon (15 ml) olive oil
- Salt and pepper
- 2 slices good quality white bread
- ¼ cup (60 ml) mayonnaise
- 2-3 butter lettuce leaves
Method:
- In a large skillet over medium-high heat, fry the bacon until crisp, turning often, roughly 4-5 minutes.
- Drain the bacon on paper towels
- While the bacon cooks, slice the tomato into thin rounds. Transfer to a plate, season with salt and pepper, and dress with the vinegar and olive oil.
- Toast the bread
- Spread the toast generously with the mayo on one side
- Top the mayo with the tomatoes, followed by the lettuce
- Top the lettuce with the bacon, crown with the other piece of mayo’d toast, and secure with frilly toothpicks. Cut in half and serve immediately.
