Spiralizer Fries with Blender Hollandaise and Eggs

Ingredients:

Blender Hollandaise:

2/3 cup (160 ml) salted butter

3 eggs

2 tablespoons (30 ml) lemon juice

¼ teaspoon (1.25 ml) hot sauce

Spiralizer Fries:

2 russet potatoes

Vegetable oil, for frying

Salt

To Serve:

Fried eggs (1-2 per person)

 

Method:

Make the Blender Hollandaise: Melt butter in a pan over medium heat until still creamy and just starting to foam.

Separate the eggs and add egg yolks into blender. Discard the whites or save for another use.

Add lemon juice and hot sauce to the yolks, cover, and blend on low until uniform.

While blender is running, open the hole in the middle of the lid and slowly add melted butter in a steady stream.

Keep blending and adding butter until a creamy mayonnaise texture has formed and all the butter has been incorporated.

Use immediately or keep slightly warm (such as near the stove) to prevent the sauce from breaking.

Make the Spiralizer Fries: Attach potatoes to spiralizer and turn crank to create potato spirals.

Heat a generous amount of vegetable oil in a skillet until shimmering.

Add a scoop of potato spirals to skillet and fry 1-2 minutes, until starting to brown. Flip and fry other side until evenly golden.

Transfer to paper towel-lined plate and season with salt.

Serve hot with a fried egg and the reserved Blender Hollandaise Sauce.
