In the ‘Quick Eats’ episode of The Urban Vegetarian, host Desiree Nielsen shows us that eating healthy doesn’t have to be boring or take lots of time. In this recipe, she specifically shows us how to save time during hectic mornings with a batch of overnight oats topped with fresh seasonal berries.
Serves 2-3
Ingredients:
2 cups (470 ml) oats
2 ½ cups (590 ml) almond milk
1 teaspoon (5 ml) lemon juice
2 tablespoons (30 ml) honey
1 tablespoon (15 ml) chia seeds
1 tablespoon (15 ml) flax seeds
2 teaspoons (10 ml) cacao nibs
Dash of cinnamon
For topping (optional): extra almond milk, honey, fruit
Method:
In a bowl, mix together oats, almond milk, lemon, honey, chia, flax, cacao, and cinnamon. Refrigerate overnight in an airtight container.
Top with your favourite oatmeal toppings.
