Tomato Granité

Ingredients:

  • 1 1/3 pounds (600 g) very ripe tomatoes, chopped
  • 1 1/3 pounds (600 g) watermelon
  • 1 teaspoon (5 ml) salt
  • ¼ cup (60 ml) sugar
  • 1 tablespoon (15 ml) lime juice
  • 2 tablespoons (30 ml) mint, finely chopped

 


 

Method:

In a blender, combine the tomatoes, watermelon, salt, sugar, and lime juice, blend well.

Strain the mixture through a fine sieve into a bowl.

Pour the strained mixture into a rimmed baking sheet.

Add the mint to the mixture and stir.

Freeze flat until frozen around the edges and slushy in the middle.

Using a fork, stir the mixture to break up the ice into smaller ice crystals.

Return to the freezer, then repeat the fork-fluffing process every half hour until it’s completely frozen, with the texture of snow.
