Bruschetta

Ingredients:

6 slices of country-slice bread

4 heirloom tomatoes, sliced

2 cloves garlic, peeled

½ cup (120ml) parmesan cheese

Olive oil, for drizzling

3 tablespoons (45ml) fresh basil, chopped

Salt and pepper to taste

 

Method:

Preheat grill to high heat.

Brush bread with a little olive oil.

Place bread on grill and cook until slightly charred on both sides. Remove from grill.

Rub bread with garlic cloves to infuse the taste.

Place overlapping slices of tomatoes on bread.

Sprinkle with parmesan cheese.

Season with salt and pepper.

Drizzle olive oil over the Bruschetta.

Garnish with chopped basil.
