Bread and Butter
Ingredients:
Smoked Goat Butter:
- 1 4-ounce (113 g) block goat butter
Honey-Herb Bread:
- 1 small loaf bread, plain
- 2 tablespoons (30 ml) honey, warm
- 2 tablespoons (30 ml) mixed chopped herbs (rosemary, oregano, thyme)
- Pepper
- Black sea salt, to garnish
Special Equipment:
- Smoking gun and wood chips, large zip-top bag
Method:
For the Smoked Goat Butter:
Place goat butter onto a small plate.
Keeping the plate level, slide it into a large zip top bag sideways. Set the bag/plate on a counter and seal ¾ of the way, leaving the bag loose around the butter.
Heat wood chips in a smoking gun until smouldering. Use the smoking gun to blow smoke into the opening in the zip top bag with the butter.
When the bag has filled with smoke, seal and set aside for one hour.
After one hour, open the bag with the smoked butter, remove from bag.
Transfer to a ramekin, set aside.
For the Bread:
Preheat oven to 350 F (175 C).
Brush warm honey over bread, sprinkle on mixed chopped herbs, add some freshly cracked black pepper.
Place the dressed bread in the oven for 5-7 minutes, until warmed through and fragrant.
To Serve:
Remove the bread from the oven, slice and transfer to a nice board.
Garnish the smoked butter with black sea salt, place alongside the bread and serve immediately.
