Spring Deviled Eggs

Ingredients:

  • 6 hard boiled eggs
  • ¼ cup (60 ml) mayonnaise
  • ½ teaspoon (2.5 ml) lemon zest
  • 2 teaspoons (10 ml) lemon juice
  • 2 tablespoons (30 ml) chopped capers
  • Salt and pepper
  • 2 ounces (57 g) smoked salmon
  • 2 tablespoons (30 ml) minced chives

Method:

Slice hard boiled eggs in half lengthwise. Carefully scoop the cooked yolks into a bowl. Set the whites aside on a tray or serving plate.

To the yolks, add the mayonnaise, lemon zest and juice, and capers. Mash and mix with a fork until well combined. Season with salt and pepper.

Transfer the mixture into a piping bag and pipe into the egg whites.

Top each deviled egg with a piece of smoked salmon and chives. Serve immediately.
