Goose Fat Yorkshire Puddings

Ingredients

  • 4 eggs
  • cup (160 ml) flour
  • ¾ cup (180 ml) milk
  • cup (30 ml) water
  • Salt
  • Rendered goose fat (or rendered/melted duck fat)

Method

  • In a bowl, combine the eggs, flour, milk, and water. Season with salt and mix well. Cover the bowl with plastic wrap and allow the batter to rest in the refrigerator overnight.
  • Preheat oven to 450 F (230 C).
  • Pour enough goose fat into the wells of a non-stick muffin pan to cover the bottoms. Place the muffin pan in the oven and heat until the fat begins to smoke, 6-8 minutes.
  • Using a ladle, carefully fill each well ½ – ¾ of the way up with the batter. Bake until risen, golden-brown and crisp, 15-25 minutes based on the size of the muffin wells.
  • Serve immediately.
