Ingredients:
2 ½ pounds (1.14 kg) Yukon Gold, Idaho, or Russet potatoes
6-7 cups (1.4-1.7 L) vegetable oil

Method:
Wash and scrub potatoes. Slice lengthwise into strips.
Line a baking tray or a large serving plate with paper towel.
Heat oil to 275 F (135 C) in a heavy pot.
Put potatoes in hot oil, then turn heat up to medium-high (you want the thermometer to read 375 F [190 C]). Cook for 18 minutes. Remove to paper towel-lined plate. Sprinkle with salt and serve.
