Ingredients:
3 cups (720ml) all-purpose flour
1 tablespoon (15ml) baking powder
½ teaspoon (3ml) salt
4 ounces (120g) cold butter, cut into small cubes
½ teaspoon (3ml) ground black pepper
1 tablespoon (15ml) paprika
1 cup (240ml) grated Welsh cheddar cheese
4 slices of bacon, cooked and chopped
¼ cup (60ml) finely chopped chives
1 cup (240ml) cream
1 egg, beaten
1 cup (240ml) grated yellow cheddar
1 tablespoon (15ml) Welsh smoked sea salt
Method:
Preheat the oven to 400 F (205 C).
Into a large mixing bowl, sift together the flour, baking powder, and salt.
Add cubes of butter and slightly incorporate using a fork.
Add pepper, paprika, and Welsh cheddar cheese.
Using the fork, incorporate all ingredients together until small lumps start to form in the dough.
Add bacon, chives, and cream, and keep mixing until you reach a slightly stiff but smooth dough.
Place dough onto a lightly floured surface and pat until it comes together.
Form into a large circle 10 inches wide and 2 inches high.
Place onto a baking sheet with parchment paper.
Brush the top with egg wash and score with a sharp knife into 8 sections.
Top with yellow cheddar and sea salt, and place in the oven.
Bake for 20-22 minutes, or until golden brown and fluffy.
Remove from oven and serve hot or at room temperature.
