Apple, Peach and Ginger Flambe
Ingredients
- ¼ cup (60 ml) butter
- ¼ cup (60 ml) brown sugar
- 3 peaches, chopped
- 2 apples, chopped
- ¼ cup (60 ml) tequila
- ½ teaspoon (2.5 ml) ground cardamom
- ½ teaspoon (2.5 ml) ground cinnamon
- Christmas cake, to serve
Method
- In a large skillet over high heat, combine the butter and brown sugar. Once the sugar is melted, add the peaches and apples. Cook, stirring constantly until tender, roughly 2 minutes.
- Add the tequila, and carefully ignite. Once the flames have subsided, add the cardamom and cinnamon. Stir and toss to coat the fruit. Set the pan aside to cool slightly.
- Pour the warm flambe over the Christmas cake, slice and serve immediately.
