Apple, Peach and Ginger Flambe

Ingredients

  • ¼ cup (60 ml) butter
  • ¼ cup (60 ml) brown sugar
  • 3 peaches, chopped
  • 2 apples, chopped
  • ¼ cup (60 ml) tequila
  • ½ teaspoon (2.5 ml) ground cardamom
  • ½ teaspoon (2.5 ml) ground cinnamon
  • Christmas cake, to serve

Method

  • In a large skillet over high heat, combine the butter and brown sugar. Once the sugar is melted, add the peaches and apples. Cook, stirring constantly until tender, roughly 2 minutes.
  • Add the tequila, and carefully ignite. Once the flames have subsided, add the cardamom and cinnamon. Stir and toss to coat the fruit. Set the pan aside to cool slightly.
  • Pour the warm flambe over the Christmas cake, slice and serve immediately.
