Sheet Pan Roasted Curried Cauliflower
Ingredients:
- 3 tablespoons (45 ml) olive oil
- 1 tablespoon (15 ml) yellow curry powder
- 1 tablespoon (15 ml) lemon juice
- 1 pound (454 g) cauliflower florets, cut into ½ inch (1.25 cm) pieces
- Salt and pepper
Method:
Preheat the oven to 400 F (205 C). Line a baking sheet with aluminium foil.
In a bowl, combine the oil, curry powder, lemon juice, and cauliflower florets. Season with salt and pepper and toss until well coated.
Turn the seasoned cauliflower out onto the lined sheet tray.
Transfer to the oven and bake until golden and crispy, 25-30 minutes.
Serve immediately.
