Sauteed Swiss chard

Serves 4

Ingredients

  • 1 pound (454g) Swiss chard
  • 1 tablespoon (15ml) butter
  • Salt and pepper
  • Juice of one lemon

 Directions

  1. Cut the ribs and stem from the Swiss chard.  Reserve. Tear the large leaves into 2 inch (5cm) pieces.
  2. In a large sauté pan heat the butter just to melt over medium heat.
  3. Add the stems of the Chard and sauté for 1 minute just too lightly soften.  Add the leaves and sauté for 20 seconds just to wilt. Season with salt and pepper. Remove from heat and finish with splashes of lemon juice.
  4. Serve hot with stuffed Cornish game hens
