Sautéed Baby Bok Choy

Soft mellow bok choy flavored with ginger, garlic and a splash of lemon. What could be simpler? An excellent side dish to any meal – Japanese or otherwise. Great with Miso and Sake Glazed Cod.

Ingredients

  • 1 lb. baby bok choy (454g)
  • 1 teaspoon fine diced ginger (5ml)
  • 1 teaspoon fine diced garlic (5ml)
  • Juice of 1 lemon
  • 1 tablespoon vegetable oil (15ml)
  • Salt and pepper

Directions

  1. Slice off the woody bottom of the bok choy.  Wash under cold running water.
  2. Cut into 1 inch pieces including the leaves.
  3. Place a large sauté pan over medium high heat.  Add oil, garlic and ginger cook 30 seconds or until fragrant but not browning. Add the bok choy and stir fry for 1 minute just until heated through but still crispy. Season with salt and pepper and drizzle with lemon juice.  Remove from heat. Serve hot.
