Radish Confit

Ingredients:

  • 450 grams red radishes, sliced into thin half-moons
  • 1 tablespoon minced ginger (15 millilitres)
  • 1 cup cranberry juice (250 millilitres)
  • 2 cups simple syrup (2:1 / sugar: water) (500 millilitres)
  • ¼ teaspoon dried crushed chilies
  • ¼ teaspoon salt

 


 

Method:

Place all ingredients in a non-reactive saucepan and simmer until you’re left with a syrup-like consistency and all the radishes are glazed. Cool and serve.
