Lamb Fat Roasted Potatoes

Ingredients:

4 lbs (64oz) medium Yukon Gold potatoes, peeled and cut into quarters
1 cup (240ml) lamb fat
Salt and pepper
¼ cup (60ml) fresh parsley, chopped

Method:

Bring lightly-salted water to a boil over high heat.
Add potatoes and cook for 3-4 minutes to blanch.
Strain potatoes and reserve.
Preheat oven to 400 F (205 C).
In a large skillet, heat lamb fat over medium-high heat.
Add potatoes and cook for 3-4 minutes, or until slightly golden.
Flip and cook for 1 minute.
Season with salt and pepper.
Place skillet in the oven and cook for 10-12 minutes.
Remove skillet from oven, flip potatoes and return to oven.
Cook for 10-12 minutes one more time.
Once potatoes are fully cooked and golden brown on all sides, remove from heat.
Serve hot and garnish with chopped parsley.
