Yield: 4 burritos
INGREDIENTS:
4 x 8-inch (20 cm) flour tortillas
1 cup (240 ml) semisweet chocolate pieces
4 bananas, chopped
1 cup (240 ml) fresh cherries
2 tablespoons (30 ml) unsalted butter, melted
1 cup (240 ml) whipping cream
Oil, for grill
To serve
Vanilla ice cream
Whipped cream
Chopped cherries
Mint leaves
METHOD:
Prepare the barbeque for direct grilling. Preheat grill to medium-low heat 250-350 F (120-175 C).
Wrap soft tortillas in foil and place on grill to warm. Remove from heat.
To wrap, place chocolate, bananas, and cherries in center of each tortilla. Evenly distribute filling over the tortilla. Fold the sides over filling, and roll the tortilla like an envelope. Brush lightly with melted butter lay on a tray seam side down.
Brush grill with oil and place wraps directly on the grill. Cook for approximately 3 minutes, to achieve grill marks and melt filling. Brush with more melted butter and flip using a spatula. Cook for another 3 minutes. Remove from grill and plate.
Serve with vanilla ice cream, whipped cream, chopped cherries, and mint leaves.
