Brussels Sprouts and Bacon

Yield: 6-8 servings.
Ingredients:
2 lbs (900g) Brussels sprouts, halved
12 strips of bacon, cooked and chopped
4 cups (1L) chicken stock
½ cup (120ml) fresh Parmesan, grated
2 tablespoons (30ml) olive oil
1 tablespoon (15ml) truffle oil
Salt and pepper, to taste
Method:
Pre-heat oven to 400oF (205oC).
Bring stock to a boil in a large sauce pan over high heat.
Add Brussel sprouts, and cook for 12-15 minutes.
Remove Brussels sprouts from boiling stock, and place on a roasting tray with parchment paper.
Drizzle sprouts with olive oil, and season with salt and pepper.
Place sprouts in oven and roast for 12-15 minutes.
Remove sprouts from oven and transfer to a serving dish.
Drizzle truffle oil over the sprouts, and garnish with bacon bits and grated parmesan.
Serve immediately.
