Tsuyu Sauce
Ease of preparation rating: Medium.
Yield: 4 servings.
Ingredients:
¼ cup (60ml) soy sauce
2 tablespoons (30ml) mirin
2 tablespoons (30ml) sugar
2 cups (480ml) dashi
Method:
Heat mirin and sugar in medium-sized sauce pan over high heat.
Add soy sauce and dashi to pan and continue to mix.
Heat until the sugar has dissolved completely.
Bring to a boil and cook for 2 minutes.
Remove from heat, and place in the refrigerator to cool.
The sauce can rest for a day or two. The longer it rests the more the flavours will infuse together for a richer taste.
