Tomato-Basil Sauce

Ingredients

  • 1/4 cup olive oil
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 5 pounds plum tomatoes, seeded and chopped
  • 1 tbsp sugar
  • 1 cup chopped fresh basil
  • Salt and pepper

Directions

  1. Preheat your oven to 400F
  2. Heat the oil in a medium saucepan over a medium high heat till hot but not smoking
  3. Add the garlic and onion and reduce the heat to medium. Cook for 5 minutes, or until the onion has become translucent but not browned
  4. Add the sugar and half the basil and sauté for 1 minute longer, stirring
  5. Add the tomatoes and stir some more. Transfer the sauce to the oven and cook for 40 minutes
  6. Remove from the oven and stir in the rest of the basil. Adjust seasoning with salt and pepper
