Port Berry Sauce

Ingredients

  • 1 cup (250 mL) port
  • 1/2 cup (125 mL) frozen blackberries
  • 1/2 shallot, chopped
  • 2 teaspoons (10 mL) freshly chopped ginger
  • 1 teaspoon (5 mL) black peppercorns
  • 1 sprig fresh thyme

Directions

  1. Place all of the ingredients in a saucepan, and bring to a simmer over medium-high heat.
  2. Reduce to a simmer, and cook for 15 minutes or until slightly thickened.
  3. Strain the sauce through a fine-mesh sieve, using the back of a spoon to mash through some of the pulp.
  4. Serve warm with roast duck or other game meats.
