Mascarpone Whip Cream

Ingredients

  • ¾ cup 35% whipping cream (180ml)
  • ½ cup mascarpone cheese (125ml)
  • 3 tablespoons icing sugar (45ml)
  • ½ vanilla bean scraped

Directions

  1. Place mascarpone in bowl and beat lightly with a wooden spoon to soften, add vanilla bean.
  2. In a separate bowl whisk icing sugar with whip cream until soft peaks are achieved.
  3. Gently fold the whip cream into the cheese mixture in 3 additions.
  4. Serve cold with pears.
