Horseradish and Apple Cream Sauce

Ingredients

  • 8 ounces ricotta cheese, partly skimmed (250 grams)
  • 16 fluid ounces non-fat yogurt (500 millilitres)
  • 4 fluid ounces red wine vinegar (125 millilitres)
  • 1 ½ tablespoons prepared horseradish (45 grams)
  • 2 ounces granny smith apple, peeled and grated (60 grams)
  • Squeeze of lemon juice
  • Salt and pepper

Directions

  1. Puree the ricotta in a food processor until smooth.
  2. Add the yogurt and vinegar. Process again.
  3. Pour the creamy mixture into a bowl and fold in the horseradish and apple gratings.
