Caramel Sauce

Ingredients

  • 650 grams sugar (1 pound 5 ounces)
  • 250 millilitres water (1 cup)
  • 600 millilitres whipping cream (2 ½ cups)

Directions

  1. Dissolve the sugar in the water over a low heat.
  2. Turn the heat to high and caramelize the sugar, until golden.
  3. Remove from heat and carefully add the cream a little at a time.
  4. Add all the cream and stir over medium heat until dissolved. Pass through a sieve and let cool.
