Radicchio Salad

Ingredients:

1 head radicchio, torn into bite-sized pieces

1 cup (240 ml) white kidney beans

¼ cup (60 ml) olive oil

3 tablespoons (45 ml) balsamic vinegar

½ teaspoon (2.5 ml) salt

1 teaspoon (5 ml) ground black pepper

½ cup (120 ml) grated Parmesan

 

Method:

Add radicchio and white kidney beans to a large bowl and drizzle with olive oil and balsamic vinegar, then sprinkle with salt and ground black pepper. Toss to coat thoroughly. Top with grated Parmesan.
