Olive Salad

Ingredients

  • 2 sweet pepper, seeded and finely chopped
  • 4 medium tomatoes
  • ½ cup sliced cucumbers – (125ml)
  • 2 small onions, thinly sliced
  • ½ cup black olives – (125ml)
  • 6 anchovy fillets, chopped
  • 2 hard-boiled eggs, quartered
  • 1 teaspoon fresh basil, chopped – (5ml)
  • 1 teaspoon cilantro – (5ml)
  • 3 tablespoons olive oil – (45ml)
  • 1 tablespoon freshly squeezed lemon juice – (15ml)
  • Salt and pepper to taste

Directions

  1. Combine black olives and chopped anchovy fillet in a bowl.
  2. Seed and chop red pepper and add to black olive mixture. Add chopped tomatoes, and sliced cucumber into bowl, toss by flipping the bowl.  Add freshly chopped herbs – basil, cilantro and parsley.  Toss again.
  3. In a separate bowl combine olive oil, lemon juice and salt and pepper.
  4. Pour your dressing into the salad bowl and garnish with quartered hard boiled eggs.
  5. Enjoy!
