Mexican Black Bean Salad

Ingredients:

¼ cup (60 ml) olive oil

¼ cup (60 ml) lime juice

1 tablespoon (15 ml) honey

1 teaspoon (5 ml) chili powder

½ teaspoon (2.5 ml) garlic powder

½ teaspoon (2.5 ml) salt

1 x 19-ounce (540 ml) can black beans, drained and rinsed

1 x 19-ounce (540 ml) can corn niblets, drained and rinsed

½ red onion, chopped

½ cup (120 ml) chopped cilantro, plus more for garnish

 

Method:

Combine olive oil, lime juice, honey, chili powder, garlic powder, and salt in a large bowl. Add black beans, corn niblets, red onion and chopped cilantro to bowl with dressing and stir to combine thoroughly. Top with extra chopped cilantro to garnish.
