Ingredients:

  • 5 heads mixed radicchio
  • ¼ cup (60 ml) olive oil, plus more for drizzling
  • Salt and pepper
  • Balsamic reduction, for drizzling
  • ½ cup (120 ml) toasted, chopped hazelnuts
  • Thinly sliced Parmesan cheese

Method:

Leaving stem intact, slice heads of radicchio in half.

Rub halves with olive oil and sprinkle with salt and pepper.

Grill over medium-high heat until slightly wilted and charred, 2-3 minutes, turning once. Transfer to a large platter.

Drizzle with olive oil and balsamic reduction. Sprinkle with toasted, chopped hazelnuts and thinly sliced Parmesan cheese.
