Green Bean and Roasted Coconut Salad

Ingredients

  • 200g green beans
  • 1 package long thread coconut, toasted
  • ½ red onion, sliced thinly

Chilli Lime Dressing:

  • Juice of 1 lime
  • ½ tsp minced red chilli
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar

Directions

  1. Bring a pot of salted water to boil and add the beans. Cook for 2 minutes.
  2. Drain and rinse in cold water.
  3. To toast the coconut, add it to a dry hot pan and allow it to brown slightly. Take it off before it browns too much as it will continue to cook once removed from the heat. Mix the onions, coconut and beans together with the dressing below. .

Chilli Lime Dressing:

  1. Stir all ingredients together in a small bowl.
