Bumper Crop Tomato Salad

Ingredients

  • 8 summer tomatoes cut into wedges (try and find a variety of color and sizes)
  • 1/4 of a small red onion sliced very thin
  • ¼ cup fresh basil leaves torn (60ml)
  • 9 baby bococcini balls sliced ¼ inch
  • 2 tablespoons good quality olive oil (30ml)
  • Salt and pepper to taste (try and use a good quality flavorful salt)

Directions

  1. Place the tomatoes on a large serving platter.
  2. Sprinkle with onions, basil and cheese.
  3. Drizzle with olive oil and season with salt and pepper.
