Bumper Crop Tomato Salad
Serves: 6
Ingredients
- 8 summer tomatoes cut into wedges (try and find a variety of color and sizes)
- 1/4 of a small red onion sliced very thin
- ¼ cup fresh basil leaves torn (60ml)
- 9 baby bococcini balls sliced ¼ inch
- 2 tablespoons good quality olive oil (30ml)
- Salt and pepper to taste (try and use a good quality flavorful salt)
Directions
- Place the tomatoes on a large serving platter.
- Sprinkle with onions, basil and cheese.
- Drizzle with olive oil and season with salt and pepper.
