1 sheet store-bought puff pastry, thawed
Flour, for dusting
¾ cup (160 ml) cream cheese
2 tablespoons (30 ml) sugar
½ teaspoon (2.5 ml) vanilla extract
1 cup (240 ml) mixed berries (raspberries, blackberries and blueberries)
Icing sugar, for dusting
Preheat oven to 425 F (230 C).
On a work surface lightly dusted with flour, unroll puff pastry. Cut in half and discard one half (or reserve for another use). Using a knife, score a border roughly an inch from the edge of the puff pastry. Use a fork to prick all over the puff pastry inside the border.
Beat together the cream cheese, sugar, and vanilla extract until light and creamy. Spread cream cheese mixture evenly inside border. Put in oven and bake for 15-20 minutes, until border is golden and puffed up.
Remove from oven, sprinkle berries over cream cheese, and dust with icing sugar.
