Detox Kale Salad

Ingredients:

  • 1 bag Superfood Salad Mix (kale/broccoli/cauliflower/cabbage)
  • ½ cup (120 ml) dried cranberries
  • ¼ cup (60 ml) toasted pumpkin seeds
  • 1 cup (240 ml) blueberries
  • ½ cup (120 ml) chopped parsley
  • ¼ cup (60 ml) chopped cilantro
  • 1 inch (2.5 cm) ginger, grated
  • 1 teaspoon (5 ml) ground turmeric
  • 1 lemon, juice
  • 1 garlic clove, grated
  • ⅓ cup (80 ml) apple cider vinegar
  • 1 cup (240 ml) avocado oil
  • Salt and pepper

Method:

In a large bowl, combine the salad mix, cranberries, pumpkin seeds, blueberries, parsley, and cilantro. Toss and set aside.

In a smaller bowl, whisk together the ginger, turmeric, lemon juice, garlic, vinegar, and avocado oil. Season with salt and pepper.

Pour the dressing over the salad, toss gently to coat, and serve immediately.
