  • 1 medium shallot, roughly chopped
  • 1 small carrot, roughly chopped
  • 1 small celery stalk, roughly chopped
  • ¼ cup (60ml) olive oil, plus more as needed
  • Kosher salt and freshly ground black pepper
  • 2 garlic cloves, roughly chopped
  • ½ teaspoon chopped fresh rosemary
  • ½ cup (60g) toasted walnut pieces
  • 1 teaspoon aged balsamic vinegar
  • Toasted baguette slices or crackers, for serving.

Method

  • Preheat the oven to 400F (200C)
  • Combine the fancy and cremini mushrooms, shallot, carrot, and celery in a large bowl, and toss with the olive oil until evenly coated. Season liberally with salt and pepper.
  • Add the mixture to a large, rimmed baking sheet, and roast for about 30 minutes, until the mushrooms have browned and most of the water that they release has evaporated. Shake the pan and rotate it halfway through cooking.
  • Remove from the oven. Stir in the garlic and rosemary, and roast for another 5 minutes, until the garlic is fragrant. Remove from the oven, and let it cook for 10 minutes.
  • Add the roasted mushroom mixture and the walnuts to a food processor, and pulse to a coarse, country-style pate-like texture. The mixture should be quite chunky but easily spreadable onto a cracker. Transfer the pate to a bowl.
  • Stir in the balsamic, and add more olive oil, 1 tablespoon at a time, if the mix seems dry. It should just hold together. Season with more salt, if needed.
  • Serve with the baguette slices or crackers.
