Mediterranean Vegetable Board

Ingredients:

  • 2 green zucchinis, sliced lengthwise
  • 4 mini cucumbers, sliced into rounds
  • 2 heirloom tomatoes,1 red and 1 yellow, sliced thick
  • 1 vine cherry tomatoes
  • 2 yellow zucchinis, sliced lengthwise
  • 1 sourdough boule, sliced
  • 1 bunch asparagus
  • 2 bunches scallions
  • 1 lemon, juiced
  • Olive oil
  • Castelvetrano olives
  • Crushed Aleppo pepper
  • Feta cheese, cubed
  • 1 bunch fresh dill
  • 1 bunch fresh mint
  • 2 cups sour cream
  • 1 bunch fresh basil
  • Salt to taste

 

Method:

Make the green goddess sauce by blending the sour cream, lemon juice, garlic, and most of the herbs, keeping some leaves for garnish. Season to taste with salt and place in a bowl.

Grill the zucchinis, asparagus, scallions, and sourdough until charred on both sides. Place on a board and garnish with remaining fresh herbs.

Warm the olives in a pan with olive oil and a sprinkle of crushed Aleppo pepper. Place in a bowl.

Add the bowl of olives, feta cheese, cucumbers, and tomatoes to the board and serve with the bowl of green goddess sauce.
