Garlicky Waffle Fries (Papas rejilla a la provenzal)

Ingredients
3 large potatoes (Idaho)
3 cups frying oil (canola or veggie)
3 garlic cloves
1 bunch parsley
Sea salt
Pepper
Smoked paprika
Method:
1. Peel the potatoes
2. Slice with the serrated attachment using a mandolin.
3. Place potatoes in a bowl with cold water under running water and wash until water runs clean and all starch has been washed
4. Heat oil in a deep pan to 340*
5. Fry potatoes in small batches, until lightly golden and crunchy.
6. Place in a large pan covered with wax paper.
7. Sprinkle with salt and pepper.
8. Chop garlic and parsley and generously sprinkle over the waffle fries.
9. Serve hot!
