Colombian Cheese Fritters (Buñuelos)
Buñuelos are golden, deep-fried cheese fritters with a crisp exterior and a soft, airy interior, made from a blend of cassava flour, cornstarch, and salty, tangy queso costeño or queso fresco. Lightly sweetened and rich with cheese flavor, they are traditionally enjoyed warm alongside coffee or hot chocolate. Distinctive for their chewy-yet-fluffy texture and balanced sweet-savory profile, buñuelos are a beloved treat during Colombian holidays and festive gatherings.
Ingredients:
- ¾ cup (117 ml) cassava/yuca flour
- ¾ cup (117 ml) cornstarch
- 2 cups (473 g) queso costeño, or 1 cup (237 g) queso fresco and 1 cup (237 g) feta cheese, grated
- 1 large egg, beaten
- 2 tbsp (10 ml) unsalted butter, at room temperature
- 2 tbsp (10 ml) granulated sugar
- ½ tsp (7.4 ml) baking powder
- ½ tsp (7.4 ml) salt
- ½ cup (118 ml) whole milk
- Vegetable oil, for frying
Method:
Beat together the egg, milk, and butter in a medium bowl. In a large bowl, mix the cassava flour, cornstarch, grated cheese, sugar, baking powder, and salt thoroughly to combine. Add the liquids and mix with the tips of your fingers until a smooth dough comes together.
Pinch off 2 tbsp portions of dough and roll into round balls in your hands.
In a large heavy bottomed pot, heat enough oil for deep frying to 325 F (163 C). Working in batches so as not to crowd the oil, fry the fritters until they are golden brown, about 5 minutes. Transfer to a paper towel lined tray to drain.
Serve warm with coffee or hot chocolate.
