Cheese and guava empanadas (Empanadas dulces de yuca)

Ingredients:
• Grated yuca (from above)
• 1 egg white
• ¼ teaspoon Salt
• 2 tablespoons Sugar
• Yucca starch
• Fresh cheese or Philadelphia cheese
• Guava paste (or quince)
Method:
1. In a bowl, make a dough with the grated yuca, salt, sugar, starch and egg white. It should be soft and pliable, like playdough.
2. Using a few zip-lock bags, press balls of the dough to make small discs.
3. Fill the disks with a cube of cheese and a cube of guava.
4. Fold like a half moon and make sure the edged are well closed.
5. Heat oil to 350* and fry the empanadas until lightly brown.
6. Dust with powder sugar when still warm.
