Ingredients:
1 cup blue cheese (Danish blue or the one of your choice)
½ cup unsalted butter
¼ cup whisky (like my mom used) or bourbon (what I use)
Fresh black pepper
Method:
1. In a bowl, mash the butter and cheese together until a soft cream has formed.
2. Add bourbon in 2-3 batches and incorporate well.
3. Finish with freshly ground black pepper and more salt if needed.
4. Serve with warm baguettes or your favourite crackers.
