Sausage Rolls (UK)
Classic UK sausage rolls featuring seasoned pork encased in buttery puff pastry. Aromatic herbs like sage, thyme, and fennel, along with a hint of nutmeg and mace, give a savory, fragrant flavor. Crispy on the outside and juicy inside, they’re perfect for snacking or a comforting street-food treat.
Ingredients:
- 1 tbsp (14.8ml) olive oil
- 2 cloves garlic, grated
- 1 small white onion, diced
- 2 tsp (9.9ml) ground fennel
- 2 tsp (9.9ml) fresh sage, chopped
- 2 tsp (9.9ml) fresh thyme, chopped
- ¼ tsp (1.2ml) ground nutmeg
- ¼ tsp (1.2ml) ground mace
- 1 lb ground pork
- ¾ cup (180ml) panko breadcrumbs
- 2 large eggs, one lightly whisked
- ½ tsp (2.5ml) salt
- ½ tsp (2.5ml) ground black pepper
- 2 puff pastry sheets, thawed and cut in half
- Black sesame seeds to garnish
- Ketchup for dipping, optional
Method:
Add the olive oil, garlic, onion, and celery to a pan over medium heat and cook, stirring, for about 5 minutes, or until the vegetables are translucent. Allow to cool.
Add the cooked garlic, onion, and celery to a large bowl along with the ground pork, panko breadcrumbs, 1 egg, ground fennel, sage, thyme, ground nutmeg, ground mace, salt, and pepper to the bowl and mix thoroughly to combine.
Preheat the oven to 350 F (175 C).
Position a half sheet of puff pastry in front of you with the long edges horizontal. Add ¼ of the pork mixture to the center of the puff pastry and spread out into a long, thin log that reaches the ends of the rectangle. Roll up the pastry around the sausage log and fold over itself, sealing with egg wash. Turn the log over and press gently to seal the bottom. Repeat with remaining pastry and filling, placing in the fridge if they start to become soft.
Cut the pastry logs into 4 equally sized pieces and place on 2 parchment lined baking sheets. Brush the sausage rolls with egg wash and sprinkle with black sesame seeds.
Bake the sausage rolls for 30-35 minutes, or until the pastry is dark golden brown. Allow the sausage rolls to cool for 5 minutes and serve warm, with ketchup for dipping if desired.
