Nectarine Chutney

3 nectarines sliced thin

4 tablespoons red onion, chopped fine (60ml)

2 teaspoons orange marmalade (10ml)

2 tablespoons maple syrup (30ml)

2 tablespoons rice wine vinegar (30ml)

1 tablespoon finely chopped ginger (15ml)

Juice of 1 orange

½ Thai chili chopped fine

Peel, dice the nectarines.  Place a skillet over medium heat. Add nectarines, orange juice, orange marmalade, red onions maple syrup, vinegar, ginger and chili.  Stir.  Bring to a simmer for 10 minutes.  Remove from heat and serve with rotisserie game hens.
