Khao Neeeo Mamuang Mango Coconut Sticky Rice (Thailand)
A beloved Thai dessert, this sticky rice is luxuriously creamy and infused with coconut, paired with perfectly ripe, juicy mangoes. The sweet, silky coconut sauce adds richness, while the tender, slightly chewy rice provides the perfect texture contrast—simple, fragrant, and indulgently tropical.
Ingredients:
For the Coconut Sticky Rice:
- 1 cup (240ml) Thai sweet sticky rice
- ½ cup (1290ml) coconut milk
- ½ cup (120ml) coconut cream
- 4 tbsp (59ml) sweetened condensed milk
- 1 cinnamon stick
- ½ tsp (2.5ml) salt
For the Toppings:
- ¼ cup (60ml) coconut milk
- ¼ cup (60ml) coconut cream
- 2 tbsp (29.6ml) granulated sugar
- 1 tsp (4.9ml) cornstarch
- 2 tbsp (29.6ml) water
- 2 large ripe mangoes
- 1 banana leaf, optional
- Toasted coconut, optional
Method:
Make the Coconut Sticky Rice:
Wash the rice thoroughly 4 times to remove the starch. Or, leave the rice to soak in water for at least 8 hours, then drain.
Wrap the rice in cheesecloth and place in a steamer basket lined with banana leaves or parchment paper over a pot or wok of boiling water. Steam the rice for 25 minutes.
Add the coconut milk, coconut cream, sweetened condensed milk, cinnamon stick, and salt to a pot over medium-high heat and cook, stirring occasionally, until the mixture comes to a boil. Stir in the rice, turn the heat down to low, and continue cooking until the rice has absorbed most of the liquid. Discard the cinnamon stick and set aside to cool.
Make the Toppings:
Tie the banana leaf into a knot if using. Add the coconut milk, coconut cream, banana leaf, and granulated sugar to a pot over medium-high heat and stir to dissolve the sugar. Bring the mixture to a boil.
Meanwhile, stir together the cornstarch and water in a small bowl to make a slurry. Add the slurry to the pot and stir until the sauce thickens. Discard the banana leaf and set aside the sauce to cool.
Peel and thinly slice the mangoes.
Serve the coconut sticky rice topped with fanned out mango slices, sauce, and toasted coconut if desired.
