A vibrant Vietnamese salad combining crisp green papaya, aromatic Thai basil, and savory beef jerky, dressed in a sweet-savory, slightly spicy sauce. Crunchy peanuts add texture, while the balanced flavors of sweet, salty, and tangy make this salad a refreshing and addictive street food favorite.
Ingredients:
For the Dressing:
- ¼ cup (60ml) soy sauce
- ¼ cup (60ml) granulated sugar
- ¼ cup (60ml) water
- 1 tbsp (14.8ml) rice vinegar
- 2 tbsp (29.6ml) hoisin sauce
- 1 clove garlic, grated
- 2 red Thai chilis, seeded and diced
For the Salad:
- 1 unripe papaya, peeled and cut into thin matchsticks
- 2 cups (480ml) packed Thai basil leaves
- 2 cups (480ml) Vietnamese beef jerky, cut into thin matchsticks
- 1 cup (240ml) roasted peanuts, chopped
Method:
Add all the dressing ingredients to a small bowl and whisk together to dissolve the sugar.
Toss together the papaya, Thai basil, and Vietnamese beef jerky in a large bowl. Add as much dressing as desired (you may have leftover dressing) and toss to combine.
Top with chopped peanuts and serve.
