Black Bean Salad
Ingredients:
- 2 x 19 oz (539 g) cans of black beans, rinsed and patted dry
- 1 red bell pepper, seeded and diced
- 1 green bell pepper, seeded and diced
- 1 cup (165 g) cherry tomatoes, halved
- 1 small red onion, finely diced
- 1/4 cup (8 g) cilantro leaves, chopped
- 1 tsp (3 g) chili powder
- 1 tsp (3 g) cumin
- ½ tsp (2 g) garlic powder
- ½ tsp (2 g) onion powder
- Zest from 1 lime
- Juice from 2 limes
- 3 tbsp (44 ml) olive oil
- Salt
Method:
Add black beans, red bell pepper, green bell pepper, cherry tomatoes, red onion, and cilantro to a mixing bowl. Add the olive oil, lime juice and zest, garlic powder, onion powder, cumin, chili powder, and salt to taste and toss well until fully combined.
