Method

  • Preheat griddle to medium high heat. Allow 10-15 minutes or until the surface darkens and light smoke appears
  • With a sharp knife, score the meat on the tomahawk top, bottom, and sides. Rub it with a bit of cooking oil and season liberally with salt and pepper.
  • Lay steak on griddle and sear on all sides for about 3-4 minutes per side. This will render a lot of the fat of the steak. Move steak to a cooler section of the griddle.
  • In the steak fat, place all the cut-up root vegetables and season. Allow to cook for 4-5 minutes or until vegetables are fork tender and browned.
  • Place butter, garlic, and herbs on griddle and lay steak back in the butter. Continue to sear on each side another 2-3 minutes or until desired doneness. Allow steak to rest before slicing.
  • To slice the steak, remove the bone and slice the ribeye steak into strips.
  • To serve, plate all root vegetables on bottom, and slices steak on top.
